Butter was shown to contain less vitamin K than vegetable-derived oils and spreads, corroborating the current USDA dietary guidelines recommending that consumers obtain most of their dietary fat from nonhydrogenated vegetable sources. The concentration of vitamin K varied according to fat content, which is why reduced-fat salad dressings contain lower amounts of the vitamin.

The guidelines suggest that women take in 90 micrograms of vitamin K a day, while the adequate intake (AI) requirement for men is 120 micrograms. One tablespoon of margarine would be equal to about 10 percent of the AI for men and 13 percent for women; two tablespoons of regular salad dressing provides 25 percent and 33 percent of the AI for men and women, respectively.

The researchers also measured blood concentrations of several molecules that the body secretes in response to stress. High readings for these molecules can indicate increased vulnerability to various illnesses because stress molecules, such as various hormonelike prostaglandins, induce inflammation and oxidative stress. Inflammation normally aids the repair of injured tissue as part of the body's infection-fighting defenses, but when a person's internal regulatory mechanisms are faulty, systemic low-grade inflammation can cause progressive damage. Most people, who do not know Cuba well, are unaware that there is a population of Chinese living and working there since the 1850's. Although there are perhaps only five hundred Chinese there now, there were once as many as 40,000 Chinese in Cuba.

In Havana there is a neighborhood known as "Barrio Chino", which is the equivalent of Chinatown. This neighborhood was once spread over 40 blocks, but now is somewhat run-down but still home to numerous Chinese restaurants.

Because of this Chinese influence, Cuban cuisine has absorbed some the flavors and condiments. You will find soy sauce in most Cuban homes and fried rice is well liked. I have always liked the idea of fusion foods that lie at the intersection of two distinct food traditions. I created this recipe by merging Cuban and Chinese flavors.

Rice of course is a Cuban and Chinese staple. Pork is cooked frequently in Cuban homes, so the leftovers can easily added to this dish. Merging the Chinese soy sauce with the lemon zest, garlic and parsley I think makes a delicious fried rice.

You can use fresh center cut pork chop chops for this recipe. But, as I said earlier, even leftover pork roast is delicious and can be added to the rice. In fact, fried rice is perfect leftover food and you can use leftover rice, any vegetables, meat or even fish and shrimp.

Cuban Pork Fried Rice

Ingredients

-1 pound of Pork, sliced thinly in mouth-sized pieces (cooked leftovers are fine)
-1 small onion, chopped-lemon zest from 2 lemons-small bunch of fresh parsely
-3 cloves of garlic, minced-1 bell pepper, chopped-oil for frying (peanut, vegetable or olive oil)
-3 cups cooked rice-1/2 cup of white wine (or chicken stock)2 tablespoons soy sauce

Directions

Marinate the pork in the lemon zest, garlic, salt, pepper, half of the parsley and a touch of olive oil (half an hour). Add the oil to a wok, or frying pan and heat on high for a few minutes. Add the marinated pork. After 3 or 4 minutes add the chopped onions and bell peppers and cook for several more minutes. Add the wine and cook for another few minutes until the liquid has reduced. When there is little liquid left you can add the soy sauce and the rice and mix the ingredients together. When the rice is hot and fully mixed together add the remaining parsley and serve.

In the West we tend to talk about Chinese cooking as a generalization, as though it were the same throughout China. In fact, China is a vast country, with a range of topography and climates that produce distinct regional differences. The availability of ingredients varies from region to region and as the Chinese use fresh ingredients in the majority of their cooking, dishes are influenced by availability.

One of the most important features of Chinese cooking is texture. Vegetables should remain crisp and rice and noodles should be treated like pasta and retain their 'bite' after cooking. Ingredients such as bean and curd are used for texture, even though they have little flavor in themselves. Bamboo shoots, a common ingredient, are included purely for texture.

Although the Chinese make use of regional, fresh foods, they also use dried stuffs in their recipes, in particular mushrooms, bean curd, noodles and spices. These were first used to preserve foods, but are now widely used.

In Beijing, the cold northerly climate strongly affects the cuisine. There is quite a variety in this region that has inherited influences from the Mandarin courts and there was also some Manchurian and Mongolian input. Wheat is more popular than rice and many noodle, pancake and dumpling recipes originate from this area. They also glaze, barbecue and spit roast many of their meats. Sauces are robust and rich, using many spices, soy sauce and garlic. Lamb is the most popular meat in this area as a result of the Mongolian influence.

Cantonese cooking in the south is entirely different. Here, stir-frying produces rich, inventive and colorful food. Traders and travelers have influenced the cuisine and the subtropical climate, perfect for fruit growing, has meant that many savory dishes include fruit, as well as fish and seafood. Very little meat is eaten in the South, although they are famed for their 'red' cooking, whereby foods are braised in soy sauce to give a red color. Soy is used extensively here in the thick sauces that are characteristic and rice is always included.

In the East, more starch is eaten and considerably more fat is used. Rice is served as an accompaniment or for stuffings. Rice wine is produced and used in abundance, perfectly complimenting the range of fish and seafood caught along the coastline. Pickles and other preserves feature in the regional cooking and the foods are traditionally drier, but combine many flavors. Sauces are kept to a minimum, even in stir-fries.

When cooking the Chinese tend to combine a couple of cooking methods in one dish, such as steaming and then frying, or frying and roasting.

Steaming is widely used in Chinese cooking. Traditionally bamboo steamers are used, so that a whole meal may be cooked in a stack of bamboo racks.

Stir-frying is done in a wok that must be heated before use. Foods of a similar size (all small) are stirred constantly, so that as they come into contact with the wok, they cook quickly.

Shopping, travelling, eating are always the top three on the lists of most women's interests. I am one of those too. Here what I want to share with you is the experience of tasting Yangzhou, an east city of China.

My first step onto china is an east city of Jiangsu province, named Yangzhou City. We started our date with Chinese food with a locally famous restaurant visible from the street only with a banner of golden letters on a field of red. Cafeteria-like eatery.

My first taste is the old, traditional Yangzhou fired rice. This particular dish comes with tender ham, eggs, mushrooms, shrimp, green beans and carrots. It is quite not the same with American food, but it taste really good. We were told that, except this traditional fried rice of Yangzhou, many other popular varieties of fried rice are served here, each one with its own specific list of ingredients. Then came other snake, fried dumpling-style morsels called guotie. Though slightly greasier, there beef treats ere wrapped in a dumpling and also delicious.

We next tried a helping of xiehuang tangbao, a cluster of crab roe soup dumplings, a sweet, almost dessert-like panache that added to the afternoon's proceedings.

Some say that the U.S. east coast state of Maryland boasts the best crabs anywhere in North America. Nonetheless, the crab powder roe that perfects these helpings of noodles, dumplings and steams buns in Yangzhou's cuisine simply cannot be ignored by anyone.

After those, we enjoyed some other dishes which were full of suspect. For example, when one of those dish put on the table, I thought it was a plat of string beans at first blush, with closer look I thought they were some kind of fish.
The real answer, however, surprised me- not just because the slivers of dark, nondescript and wet meat turned out to be the best dish on the table: they were finless eels. They have a consistency combining fish and liver and were infused with a sweet, mild taste...

6 cloves garlic
10g ginger
2 peppers of different colors

Preparation:

Peel shrimp, leaving tails of armor. Cut the octopus and squid and add to bowl.
Slice the onion finely throw it on the prepared seafood, sprinkle with pepper, leave for 15 minutes.

Heat wok or frying pan with oil toss sliced into rings and then insert the garlic seafoodand cook until tender and pour wine. Cut the peppers into thin slices and throw into the pan with ginger, sugar and spices.
Stir-fry briefly until the vegetables begin to smell.
At the end sprinkle the rest of pepper flakes and ready.

In North, other than boiled white rice, it is also popular to mix it with other different grains, for example, mix with millet, or mung beans, and so on.

Traditionally, rice has always been served in a rice bowl on the table, never placed on a flat plate, or mixed with dishes together. When Chinese people have guests, the rice in the bowl needs to be presented nicely. For example, it is a common practice to use a smaller bowl to put the rice in first, then transfer to another normal rice bowl. I still keep this habit to serve our guests at home.

American Chinese cuisine is the food served by some Chinese restaurants in the United States. It tastes very much different from the Chinese food, because it is cooked according to Western tastes. In the 19th century, some Chinese restaurants developed new recipes gratifying the Caucasian American tastes. In the beginning, these restaurants started serving railroad workers and were opened in towns where nobody knew about Chinese food. The food was cooked using local ingredients to please the local customer's taste. As a result, American Chinese Cuisine was invented.

Thus, the Chefs developed a new style of Chinese food. Many dishes like chop suey and General Tao's Chicken were invented. Generally, a roll and butter was served on the side with the main dishes. One of the main attractions of these restaurants is the quality and low-priced food, because much of the labor generally supplied by immigrants or family members, work for long hours on low wages.

There are primarily two types of Chinese restaurants in the United States: Take-out restaurants and Buffet-style American Chinese restaurants. Take-out restaurants, mainly catering to call-in and take-out orders, are the suitable outlets for traditional American Chinese food. Almost all the restaurants provide home delivery facility and supply food in the folded and waxed cardboard boxes, just like pizza boxes. Whereas, Buffet-style American restaurants serve a large variety of dishes in buffet style and are becoming very popular. The quality of food may differ from outlet to outlet.

There are many American Chinese chain restaurants in the United States; such as China Coast, City Wok, Leeann Chin, Manchu Wok, Panda Express, Pei Wei Asian Diner, P. F. Chang's China Bistro, and Pick up Stix. These restaurants have branches throughout the country and are very popular.

Kokosowy budyń z bananem w karmelu

czas przygotowania 10 minut
czas gotowania 25 minut
porcja dla 4 osób


Składniki:


otarta skórka limonki
200 g kaszki sago (lub jeżeli nie można dostać kaszy manny)
135g cukry brązowego
1 puszka mleka kokosowego
4 banany


Sposób przygotowania:


Skórkę z limonki włożyć do rondla z zimna wodą, zagotować wyjąć skórkę i wsypać kaszę gotować 15 minut na małym ogniu.


Gotuj 10 minut wodę z cukrem aż się zrobi karmel a następnie wlej mleko kokosowe i studź kolejne 10 minut.


Przetnij banany na pół, posyp cukrem, ułóż miąższem do dołu na rozgrzanej patelni piecz do miękkości około 5 minut.


Połącz kaszkę z mlekiem kokosowym i wlej do miseczki na podstawce połóż ciepłe banany.

Coconut pudding with banana caramel

preparation time 10 minutes
cooking time 25 minutes

Ingredients:


wiped lime peel
200 g meal, sago (or if you can not get semolina)
135g brown sugar
1 can coconut milk
4 bananas


Preparation:


Lemon zest to pan with cold water, remove the skin to boil and add grits cook for 15 minutes on low heat.


Cook 10 minutes until the water and sugar candy in the bag and then pour coconut milkand cooling another 10 minutes.


Cut bananas in half, sprinkle with sugar, place flesh down on a hot frying pan cook until tender, about 5 minutes.
